Epona

Any discussion of Ilia just doesn't seem complete without the mention of her favorite horse, Epona. She may be Link's faithful steed, but it is Ilia who cares for her so she's able to help Link with his duties at the ranch. Ilia is quite protective of Epona and tends to chide Link for pushing her too hard or making her jump those tall, sharp fences.

It's unknown what breed of horse Epona is, but the popular belief is that she is related to the Clidesdale or Shire; both are among the largest horses in the world and are known for their history in agriculture due to their powerful build and muscular strength. Based on what we know and see of Epona in Twilight Princess, it's fair to assume she is a beast of burden (not to mention the only available horse in Ordon), so she would need to be a strong, massive animal to perform the duties required of running a farm and, essentially, a business. It's true we only see Link use Epona for the task of herding, but I'm sure she's used for other tasks as well: pulling wagons, carrying large, heavy bags, and possibly tilling - Ordon is farming land after all.

Other Tidbits

Epona is named after the Celtic goddess of fertility and the protector of horses. It is suggested that she and her horses escorted the souls of great warriors into the afterlife. Epona was vastly worshiped throughout the Roman Empire well into the third century. It's also interesting to point out that in some of Epona's ancient depictions she somewhat resembles Ilia and Malon.
